Thai cheese producer to try
There are plenty of producers on Radar, but here you can taste something your palate might recognize.
Jartisann: Jartisann is handing over the king of Thai cheese. Crafts Cheeses Expas recognizes, but the star here is San Paquanburie. This is creamy beef cheese reminiscent of brie.
Little Goat Farm: Like Jartisan, Little Goat Farm has plenty of familiar favorites, including Luce DiBrie, a creamy white milk cheese with a distinctly mushroom scent. But if you have the chance, head to Pier, a soft cheese covered in crust made from safflower, flower tea, lotus pollen and lavender.
Dofan cheese: Dofan cheese may be the most ideal for people with lactose intolerance, as goat cheese contains much less lactose than cow cheese. It is a producer who is particularly loved for its simple, crunchy goat cheese, ideal for topping with almost anything.
Murrah Farm: If you're a Buffalo Cheese fan, Murrah is your producer. The company has been creating buffalo cheese since 2003 using its own organic milk as a base. The mozzarella cheese makes pizza a simple top, but the producer suggests wrapping it with “putting it in a wonton sheet and fried in hot oil for delicious fried cheese.”
