Pullman Cape Town welcomes new executive chef Melissa Stephens

A fresh chapter in cooking directions – women leading

Cape Town, June 5, 2025: Pullman Cape Town has appointed Melissa Stephens as new executive chef. The move will bolster the hotel's growing reputation as one of the city's most food-forward hospitality brands.

With years of experience in some of South Africa's most notable kitchens, including Morgenster Estate, Stephens will step into a new role leading all culinary operations across Pullman Cape Town Properties, from curated events to everyday dining experiences.

“My cooking has always been about comfort and connection,” Stevens says. “This role is an opportunity to bring that philosophy into a symbolic space, with a menu that evolves with seasonality while still rooted in both simplicity and bold flavours.”

Her arrival comes at a pivotal moment for Pullman Cape Town's food and drink identity. This has been evolving since its founding in 2023. For example, the hotel recently opened Konichiwa (a Japanese-style sushi bar already depicting local patrons) and attended Restaurant Week in South Africa.

“Melissa has a balance of technical talent and warmth, bringing a balance between creativity and strong leadership to our kitchen,” says Rayner Damons, Food and Drink Director at Pullman Cape Town. “She represents exactly where we go. Premium hospitality, especially women, led by real people who do meaningful work.”

Pullman Cape Town currently employs more women than men across the team (including department heads), and is well positioned to support Accor's global commitment to gender equity through initiatives such as #SheLeads. The program celebrates comprehensive leadership in Africa and the Middle East by highlighting the diverse voices that will shape the landscape of tomorrow's hospitality.

“As Cape Town grows its reputation on the global stage, we are evolving with it, not just through design and service, but also through who is leading our space,” Damon added. “Our vision is rooted in inclusion. We believe that a diverse team will create rich experiences for everyone walking through our doors.”

With a brand new menu rolling out under Stevens' guidance this season, guests don't have to wait long to taste what they bring to the table.

From all-day height meals in the Stratus Room to handmade cocktails on the Ghibli Bar & Rooftop terrace and Sushi Forward Plates at Konishiwa Lounge, Pullman Cape Town continues to strengthen its position as one of the city's most dynamic hospitality and culinary destinations. The hotel also offers seven fully flexible meeting and event spaces, making it a favourable option for anyone looking to balance business and lifestyle in the heart of Cape Town.

You can make a reservation for the Stratus Room via DinePlan. The restaurant is open daily from 06h30 to 22h00.
